Hello friends! And Happy Wednesday!
I don’t know about you, but here in New York City, the weather has been ALL OVER THE PLACE recently. One day it’s sunny and 95 degrees, the next, it’s thunderstorming for three days straight!

Well, last weekend, during said thunderstorm marathon, I was spending the gloomy day at my special gentleman’s apartment, watching tv and eating delicious food, as one does when the weather calls for coziness.
And what did the day call for? Pancakes for lunch! Because let’s be honest, breakfast food is great ANY time of day!

So, we whipped up these from scratch pancakes and continued on our movie marathon!

And let me tell you, they were a delight! Fluffy, perfectly golden brown, and with just the right amount of sweetness that isn’t overpowering, yet still gives you that decadence of a good pancake!

Here’s What You Need: Serves 2
1 cup AP flour
2 tsp Baking Powder
Pinch of Salt
2 Tbsp White Sugar
3/4 plus 2 Tbsp Milk (I used unsweetened almond milk and it turned out great!)
1 egg, beaten
2 Tbsp Butter, melted
2 Tsp Pure Vanilla Extract
high-smoke point oil for cooking (I used avocado oil)
Tools:
Mixing bowl
Small mixing bowl
Measuring Cups
Whisk
Griddle or large, flat nonstick pan
Spatula
Directions:
Combine flour, sugar, salt and baking powder in a mixing bowl and mix well.
In a separate smaller bowl, mix the egg, milk, vanilla and melted butter together. Make sure that the melted butter has cooled so that it doesn’t cook the egg!
Pour the wet ingredients into the dry ingredients and stir until mostly incorporated. The batter should be thick and a little lumpy – this creates light and fluffy pancakes! Then let the batter rest for 5-10 minutes.
Meanwhile, heat your griddle over low to medium heat and coat it with oil. Use a 1/4 cup measure to scoop and drop the batter onto the griddle so that you get even sized pancakes, and they cook evenly!

Cook until the first side is golden brown. (You’ll be able to tell, because the top surface begins to form little bubbles.) Flip and repeat on the other side.

Serve hot with butter and heated maple syrup!

Oh WOW! These were such a treat! There’s nothing quite like a light and fluffy pancake dunked in warm maple syrup to really brighten up a gloomy day!
Breakfast, lunch, brunch or dinner, there is NEVER a wrong time for flap jacks!

The best part of these was the texture! The golden brown outside gave way to the lightest and airy inside. It was just delightful!
And you could really taste the vanilla. It made them seem extra fancy!
And Steven was definitely a fan!

Whatever you do, make these pancakes this weekend! It’s just the right amount of indulgent to really make you feel like a queen or king!

It has been SO long since Iβve made pancakes. I actually made some protein pancakes this last weekend and ended up burning most of them. Oops. Pancakes are definitely an anytime food!
This recipe is an answer to prayer. I have always wondered if I could use almond milk for pancakes. This recipe made me hungry. I am sure I can replace the flour with my gluten-free flour without missing a beat. I am so glad you and your gentleman had a quality time together despite the weather.
