OK – wow. I’ve gotta tell ya: my mom is one heck of a cook!
I mean, every time I’m home, she’s always whipping up something delicious.
She and my dad loosely follow the keto diet, so lots of protein and veggies!
And when I was home last week, as usual, she was cooking up a storm…
In the crock pot! The whole, “Set it and forget it“ lifestyle is really convenient when you want your days free and want to come home to “instant dinner!”
And she taught me how to make it, and dang it was such a “no brainer!”
So without further ado…introducing my Mom’s Famous “Beef Over Noodles!”

The was my FAVORITE meal that she made growing up. Oh my gosh. The tender beef and these buttery egg noodles are out of this world.
And how lucky am I that she taught me all her kitchen secrets!

AKA: I can’t wait to make this outrageous meal for Steven soon!
This dinner — minus the noodles — is gluten free, paleo, keto and Specific Carb Diet friendly!

But let’s be honest…the noodles are the best part…I mean, just look at them!
Here’s What You Need: (Serves 4)
3-4 pound chuck roast
1 stick of butter
1 pack dry Ranch dressing mix
1/2 -1 cup mild pepperoncini peppers
1/2 cup beef broth
1/2 onion, sliced
4 cloves garlic, minced
salt and pepper
1 package Extra Wide Egg Noodles, cooked per package instructions
Tools:
Crock Pot Slow Cooker
Slow Cooker Liners (these are amazing and make clean up a breeze!)
Directions:
Line your slow cooker with a slow cooker liner. (This is optional but HIGHLY HIGHLY suggested, because it makes clean up a snap!)
Place your roast in the slow cooker.
Add all the other ingredients to the slow cooker.

Put the lid of the crock pot and cook on high for 4-5 hours, or on low for 8-9 hours.

If the roast seems tough, cook it for another hour.
When you’re ready to eat, make the appropriate number of servings of extra wide egg noodles, per package directions.
To plate: top a bed of cooked noodles with a mound of the slow cooked beef. Sere with a side salad and enjoy!
OK, WOW. This meal is outrageous.
The beef absolutely MELTS in your mouth! I mean, seriously, slow cooking the chuck roast makes it just fall apart.

It has absorbed all that beef broth, (and butter! haha) and just falls apart with the slight touch of a fork.
And slow cooking all day makes your house smell absolutely amazing! My mom and I went biking that afternoon and then stopped for an iced tea on the way home, and when we walked in the door, we were greeted with just the most delicious smell!

And those buttery egg noodles — I think the photos speak for themselves! ABSOLUTELY DIVINE!
My dad was most certainly a fan! He went back for seconds!!
So do yourself a favor and MAKE. THIS. DISH! I promise, you’ll make it at least once a week, given how EASY and DELICIOUS it is!!
