I am gearing up for my mom visiting next week to go WEDDING DRESS SHOPPING and Iโm really excited!
Ok so I have to share with you my new favorite summer meal!

This is one of my favorite “salad mixes!” Juicy fruit, crunchy veggies and bright cilantro make this gluten free and Specific Carb Diet friendly meal truly crave-worthy!

Here’s What You Need:
6 jumbo shrimp, halved
1 cup baby gem lettuce
1/4 red pepper, matchsticks
1/2 carrot, matchsticks
1/4 cucumber, matchsticks
1/2 mango, sliced
1 wedge pineapple, sliced
1/2 avocado, sliced
2 Tbsp cashews, chopped
1 Tbsp fresh cilantro
Dressing:
3 Tbsp EVOO (a good one!)
1 Tbsp Champagne vinegar
salt and pepper
Tools:
Good chef’s knife

Directions:
*Protip* The beauty in this salad comes from uniform knife cuts, and being able to see the different color blocks of the fruit and veggies, so if its ~aesthetic~ is something important to you, be try to cut everything the same size!
Place a bed of baby gem lettuce in a bowl. Top with your fruits and veggies. Garnish with cilantro and cashews.
Mix the olive oil, vinegar, salt and pepper separately, and then pour over the salad.
Take your photos, and then MIX MIX MIX! (Salads are always best when actually tossed with the dressing so every bite is evenly dressed, and the avocado coats everything!

Ok this salad hits the spot EVERY TIME!
This is no โwimpy salad!โ Itโs got protein in the shrimp, which is crucial if you want to make a salad a meal. Itโs got healthy fat from the avocado and the cashews – ALSO vitally important if you donโt want to be hungry again 5 minutes later.
The fruit offer that beautiful juicy sweetness, the veggies are crunchy and the perfect vessel for that champagne vinaigrette.
Not to mention, itโs just gosh darn beautiful! You put this salad down in front of anyone and they will be stunned by its gorgeously colorful aesthetic!

Itโs *almost* too pretty to eat!
So give this a try, I promise, itโll become a favorite, just as it has become mine!

This looks so delicious and I’ve been eating a lot of salads recently and I think that this would be worth trying.

Once again you have created a masterpiece! You are so artistic with your food! What a beautiful salad, the colors and textures are fabulous. I love romaine hearts, but I had never heard of “baby gem lettuce” before and it looks and sounds absolutely delicious from what I learned on my google search! I hope to be able to find it in my area.
Please tell me, what are the white spaghetti-like shreds in the the white bowl at the top of the page? I do not find a mention of it in the ingredients or see it in the finished salad.
