Allow me to introduce to you, a little slice of Heaven.
Chocolate Peanut Butter Banana Bread. Gluten Free. And full of all things good and pure in the world.

Ok, maybe a little much. But – suffice it to say — this bread ROCKS.
Now look, I know it’s Lent. And I’ve been sharing some great meatless meal ideas, buuuut, sometimes you’ve gotta have a little sweetness in your life. And Sundays don’t count during Lent because we’re celebrating Jesus’s death and resurrection during Mass, so we can break the fast!
I posted this photo on Instagram, and let me just tell you – the requests in my DM’s for this recipe were poppin’!
So without further ado:

Let me start out by saying…making this bread is a gosh darn public service. Because when you bake it — the glorious smell of banana bread wafts through the house all day long! It is so wonderful — Yankee Candle wishes they could smell this amazing!
And what’s even more wonderful? Is eating this gluten free banana bread!
Whatever you do…make the drizzle. It takes it over the top.
Quick note: This recipe is obviously not Vegan or Specific Carb Diet friendly … but for a banana bread treat that is, check out my Banana Bread Bites!
Here’s what you need: (Makes one loaf)
1 cup GF All Purpose flour (This is the brand I recommend)
1/2 cup almond flour
1 tsp Xanthan gum
1 tsp baking soda
2 1/2 tsp baking powder
1/4 tsp sea salt
1 1/2 tsp cinnamon
3 extra rip bananas (with lots of spots)
2 tsp vanilla extract
1 Tbsp extra virgin olive oil
2 Tbsp unsweetened vanilla almond milk
1 whole egg + 1 egg white
1/4 cup peanut butter
1/2 cup organic sugar
1/8 cup maple sugar
1/2 cup mini chocolate chips
Drizzle:
1/2 cup chocolate chips
1/4 cup peanut butter
Garnish:
Chopped salted peanuts
Tools:
Kitchen Aid Stand Mixer
OR
Hand Mixer
Small mixing bowl
Medium sized mixing bowl
whisk
Rubber spatula
Parchment paper
Toothpick
Bread pan
Microwave safe bowl

Directions:
Preheat the oven to 350 degrees.
Prepare your bread pan by spraying with nonstick cooking spray, and then lining with parchment paper. I cut the parchment paper to be the width of the long side of the pan. And then leave enough to “hang over” the edge, so that you can just lift it right out afterwards!
Combine all the dry ingredients and the chocolate chips in a small mixing bowl and whisk to combine.
In a separate, larger bowl, with a hand mixer (or stand mixer), blend the bananas, peanut butter, vanilla, olive oil, milks, eggs and sugars. You don’t want any lumps in the banana puree.
Then, in two batches, fold in the dry ingredients to the wet ingredients, and fold until just combine. Do not over mix!
Then, pour the batter into the prepared bread pan and bake for 40 minutes, until a toothpick comes out clean!
While it’s baking — make the drizzle! Do this by melting the chocolate chips and peanut butter in a microwave safe bowl in 30 second interval. Stir with a fork after every 30 seconds.
To serve, liberally drizzle each slice with the chocolate peanut butter sauce, and sprinkle with chopped salted peanuts.
OK — can we just take a moment here to appreciate the heavenly combination that is CHOCOLATE AND PEANUT BUTTER! It’s combination domination, if you ask me.

The sweet and salty, the rich and nutty, the G.O.A.T — this banana bread is what dreams are made of.
All you need now is a scoop of vanilla ice cream and you’ve got the making for one lethal dessert!
But honestly, it’s perfect for breakfast too! It’s a healthy treat! Protein, fruit, potassium, healthy fats, fiber — it’s a treat you can feel good about!
So whip this up, share a slice with a loved one. And thank God for blessing us with the dynamic duo: chocolate and peanut butter.
